¼ cup freshly squeezed lemon juice
1 teaspoon oregano
2 teaspoons minced fresh rosemary
1 teaspoon minced fresh thyme
2 tablespoons minced garlic
Salt and freshly ground black pepper, to taste
2 to 4 tablespoons olive oil
1 lamb rib rack (7 to 8 ribs)

  1. Set the temperature of the air fryer oven to 360ºF (182ºC). Press Start to begin
    preheating.
  2. In a small mixing bowl, combine the lemon juice, oregano, rosemary, thyme,
    garlic, salt, pepper, and olive oil and mix well.
  3. Rub the mixture over the lamb, covering all the meat. Put the rack of lamb in the
    air fryer oven. Roast for 10 minutes. Flip the rack halfway through.
  4. After 10 minutes, measure the internal temperature of the rack of lamb reaches at
    least 145ºF (63ºC).
  5. Serve immediately.
