14 ounces (397 g) cooked fresh or canned salmon, flaked with a fork
¼ cup minced scallion, white and light green parts only
¼ cup minced red bell pepper
¼ cup minced celery
2 small lemons
1 teaspoon crab boil seasoning such as Old Bay
½ teaspoon kosher salt
½ teaspoon black pepper
1 egg, beaten
½ cup fresh bread crumbs
Vegetable oil for spraying

  1. In a large bowl, combine the salmon, vegetables, the zest and juice of 1 of the
    lemons, crab boil seasoning, salt, and pepper. Add the egg and bread crumbs and
    stir to combine. Form the mixture into 4 patties weighing approximately 5 ounces
    (142 g) each. Chill until firm, about 15 minutes.
  2. Set the temperature of the air fryer oven to 400ºF (204ºC). Press Start to begin
    preheating.
  3. Spray the salmon patties with oil on all sides and spray the air fryer oven
    perforated pan. Air fry for 12 minutes, flipping halfway through, until the burgers
    are browned and cooked through. Cut the remaining lemon into 4 wedges and
    serve with the burgers. Serve immediately.
